The Food Goddess is in the Kitchen! I am delighted beyond words to present my friend, my pal, Kali Amanda Browne (daughter of the beauteous and talented Marie) aka The Food Goddess. Enjoy!

I love chicken. Passionately.

Chicken is the most versatile meat. You can do almost anything with it; almost any herb and condiment accompanies it perfectly. The fact that it remains relatively inexpensive and carries no religious taboos also has made it one of the most popular meats for princes and paupers alike for centuries.

I'm an only child and I always aim to make an impression – it's not always a good one, but often memorable. For my first act as Guest Chef, I want to share my passion and give you something simple and spectacular. This recipe is an aphrodisiac (at least it's moan inducing). If you like chicken and moaning, this is for you!

Chicken Deluxe

From The Working Stiff Cookbook by Bob Sloan

2 ounces herbed Boursin cheese
2 tablespoons sun-dried tomatoes packed in oil
2 chicken breasts, bone and skin on
1 tablespoon olive oil
1 tablespoon butter

Preheat the oven to 375°.

Place the cheese and sun-dried tomatoes in a small bowl and mix them together until fully combined. Pull back the skin on the chicken breasts and divide the mixture evenly over the flesh. Put the skin back in place over the cheese mixture and secure it on each side, along the seams, with a toothpick.

Place a large cast iron skillet on high heat. Pour the olive oil in a pool on the center of the pan and place the butter in the center of the oil. When the butter starts sizzling, spread it so the oil and butter coat the bottom of the pan. Place the breasts in the pan skin side down and cook until they are lightly browned, between 3 - 6 minutes. Turn the breasts and put the pan in the oven on the center rack. Roast for 30 minutes, until the chicken is just cooked through. Serve immediately.

Tips

Boursin is a brand of soft, herbed cheese; it can be expensive, we substitute with cream cheese.

Loosen the skin by gently prodding it: insert your finger between the skin and flesh, then lift carefully to separate.

Feel free to add pepper, but avoid too much salt because the cheese has some (garlic powder is a good substitute).

If you are dating, don't make this too early in the relationship. This is a deal closer. Save it for someone special.

Make sure the tomatoes are dry because moisture that hits the hot oil will cause splatter and nudist gourmets will suffer for their art.

This dish goes especially well with salad in a tangy dressing that can be done ahead of time and served at room temperature.
