Poorman's Cake
This is also from Grandma El's recipe book, another World War II-era eggless cake she labeled "Very Good!" The words are all hers.
POORMAN'S CAKE
Mix together 2 C brown sugar, 2 C hot water, 2 t shortening (corn oil), 1 package raisins, 1 t cloves, 1 t salt, 1 t cinnamon. Boil five minutes after the mixture begins to bubble. When the mixture is cold, add 1 C flour and 1 t baking soda dissolved in 2 t hot water. Bake in a greased tube pan for 1 hour at 350 or 375 degrees.
It's a heavy cake (dark) easy thing about it is that you can mix it all in one pan. You can add some walnuts etc if desired. Good cake if you are on a diet.
NOTE FROM BB: It says 1 C flour in her handwritten recipe but my guess is that you'll need 2. What do you think?
