Christmas Goodies: Spider Corn Bread

Ingredients:

1 1/2 cups cornmeal
1 tablespoon sugar
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
2 eggs beaten
1 1/2 tablespoons melted butter

Preheat oven to 450 degrees.

Get a 10 inch iron or very heavy metal skillet and put in oven to heat. Sift dry ingredients. Add buttermilk to eggs, then stir into corn meal mixture until smooth. Stir in butter. Pour into hot skillet.

Bake at 450 degrees for 30 minutes.

The name of this recipe comes from a "spider" or long-handled iron skillet with 3 short legs that was placed on the hearth over hot coals to bake this bread.
